I have taken a post labelled Thanksgiving Recipes and made each recipe in there its own post. This is a great recipe for a holiday or any other time. It's economical and one squash can serve 4-6 people easily.
- Whole Acorn Squash
- 2 tbsp. butter
- 2 tbsp. light brown sugar
- 1/8 tsp. cinnamon
-  pinch of ground nutmeg                 
- Preheat
 your oven to 350 degrees.
- Cut the acorn squash in half and remove the 
seeds.
- In a microwave safe dish, melt the butter.  Add in the sugar, 
cinnamon and nutmeg and stir to combine.
- Fill each half with some of 
the mixture and using a pastry brush, coat the inside and rims of the 
squash with the mixture.
- Place on a foil lined baking sheet and 
cover with foil, making a tight seal.
- Bake for approximately 1 - 1 1/2 
hours until the squash is fork tender.  Serve 1/2 per person or cut in 
slices after baking.
