Grill-Roasted Summer Squash

When your squash hides under the leaves of the plant and gets large they are actually great grill-roasted!

As careful as my husband has been picking yellow summer squash on the small side which we like, there are some they escape his eye. Two days later he finds some that have become quite large. We generally boil and mash our squash with butter, salt and pepper so the small squash is perfect for that. The larger not so much because of the size of the seeds.

We decided not to chuck the few large ones that have escaped our eyes and instead dress them up and grill them on a sheet pan. Turns out they are simply delicious done in this manner. The natural sugars caramelize and you get a hint of the smoky flavor from the hardwood charcoal as well. Simply yummy and super easy to do.
  • 1 large squash (around 10 inches) - cut in rounds about 1/4 - 3/8 inch
  • 1 tbsp. garlic (heaping) - minced (we used jar garlic for this)
  • 2 tbsp. olive oil
  • salt to taste
  • black pepper to taste
  • cooking spray
  1. Your grill needs to be started while you prep the squash. No need to peel it either.
  2. Foil line a baking sheet and spray it liberally with cooking spray.
  3. Slice the squash and place it in a bowl with the olive oil, salt and pepper and garlic. Mix well.
  4. Add the rounds to the baking sheet making sure to get some garlic on each one.
  5. When you grill is really hot place the sheet plan on the grill grates and grill each side for about 6-8 minutes per side until nice and caramelized.
Beautifully grilled summer squash accompanied by some barbecued chicken and Classic Red Potato Salad made for a wonderful dinner.


The one squash was enough for two of us and straight from our garden costs us hardly anything in ingredients making this a really inexpensive side dish. For more people, double the squash and ramp up on the garlic and a little more olive oil. Even if you purchase squash from the store or farm market, this still is an inexpensive side dish. It's pennies a serving.
