Chopped Broccoli Salad
This chopped broccoli salad recipe was given to me a few years ago by one of my husbands clients. It is a simple and easy recipe to make and something out of the everyday. Since warmer weather is approaching and outdoor picnics will be happening, it makes a nice addition to the goodies on the picnic table.
You can adjust this recipe to feed a larger amount of people. However this recipe makes enough for a side dish for around 10 people.
Salad:
2 large heads broccoli - chopped (Finely as original recipe or to the size you like.)
5 strips crispy bacon finely chopped
1 small red onion - finely chopped
1/3 to 1/2 of a bag of shredded mozzarella cheese
Dressing:
1
cup good mayonnaise
2 tbsp. red wine vinegar
Salt and Pepper to taste1 tsp. white sugar (or to taste)
Start
by cooking the bacon and while that is happening, prep the vegetables and put in a large bowl.
Make the dressing in a separate bowl so that you can taste and adjust
for additional salt, pepper or sugar to taste.
When
the bacon is cooked and cooled chop it with a sharp knife or pulse the
strips in a food processor. Add it to the vegetables and then add in the
dressing. Mix all ingredients together. If you feel that the salad is too dry for your liking, add just a splash more red wine vinegar and 1 tbsp. of mayonnaise.
