Yellow Squash and Zucchini Baked with Cheddar Cheese

A very simple recipe to make and totally affordable. Takes the squash up a notch and could become a favorite in your house. The photograph shows the squash prior to baking.

  • 3 small yellow summer squash - sliced
  • 1 long zucchini - sliced
  • butter
  • shredded cheddar cheese
  • salt and pepper to taste
  1. In a saute pan over medium high heat, melt some butter. Make sure the butter is bubbling and add in the sliced squash.
  2. Stir and coat the squash with the butter. Add salt and pepper to taste and stir.
  3. Turn the heat down to medium and saute the squash getting some of them nice and brown.
  4. Transfer to a casserole dish.
  5. Top with shredded cheddar cheese to your liking.
  6. Bake at 350 degrees until the cheese is completely melted.
Serve immediately or keep in a warming oven until the rest of your dinner components are ready.
