Spice for Grilling Vegetables
Grilling vegetables provides a very healthy way to eat. You can use just about any vegetable you like. As you can see by this photo I chose yellow and orange bell peppers, yellow summer squash and zucchini. By grilling you get more of the flavor of the vegetable. Each one stands on its' own.
I like to toss the vegetables with spice and some olive oil in a large bowl. I have a grilling basket that I use, but if you don't have one then I suggest that you cut larger pieces of pepper. As for the squash, cut the whole squash in half and then cut slices lengthwise. This allows you to place them on the grill and turn with tongs.
My spice blend is:
After you have seasoned the vegetables, add about 2 tbsp. of olive oil to the bowl and mix well to coat the vegetables.
Costing: The amount of vegetables was one each yellow and orange bell pepper, 1 medium zucchini and 1 medium yellow summer squash. The vegetables were $5.60 and with spices figure on $6.00. Feeds 4-5 people at $1.50 per person or $1.20 per person respectively.

- 2 tbsp. onion powder
- 1 tsp. ground black pepper
- 1 tsp. table salt
