Blackberry and Blueberry Freezer Pie
The combination of fresh black berries and blueberries combined with cream cheese and other goodies placed in a graham cracker crust and frozen is an awesome summer dessert. Simple to put together and it is so refreshing. It will definitely cure any sweet tooth you have. You'll be a hero in your kitchen when you make this. Makes a 9" pie.
For the Crust:
- 2 cups crushed graham crackers
- 1 sticks butter melted
- 2 tbsp. white sugar
- 1 tbsp. light brown sugar
- In a bowl combine the graham crackers and both sugars. Mix well.
- Add in the butter and mix well.
- Press into a 9" pie plate and store in the refrigerator while you are making the filling.
- 1 pint blackberries
- 1 pint blueberries
- 8 oz. cream cheese - softened
- 1/2 cup heavy cream (or whipping cream)
- 1 1/2 tsp. vanilla
- 3 packets unflavored gelatin
- 3 tbsp. blackberry preserves
- 1 14 oz. can sweetened condensed milk
- In a clean bowl whip the heavy cream and vanilla together to form soft peaks.
- In another bowl with a hand held mixer, beat the cream cheese, gelatin, preserves and condensed milk until completely combined.
- Fold in the whipped cream.
- Next, fold in all of the berries.
- Put the mixture in the graham cracker crust and place in the freezer until firm. This may take 2 or 3 hours.
