Blackberry and Blueberry Freezer Pie


The combination of fresh black berries and blueberries combined with cream cheese and other goodies placed in a graham cracker crust and frozen is an awesome summer dessert. Simple to put together and it is so refreshing. It will definitely cure any sweet tooth you have. You'll be a hero in your kitchen when you make this. Makes a 9" pie.

For the Crust:
  • 2 cups crushed graham crackers
  • 1 sticks butter melted
  • 2 tbsp. white sugar
  • 1 tbsp. light brown sugar
  1. In a bowl combine the graham crackers and both sugars. Mix well.
  2. Add in the butter and mix well.
  3. Press into a 9" pie plate and store in the refrigerator while you are making the filling.
For the Filling:
  • 1 pint blackberries
  • 1 pint blueberries
  • 8 oz. cream cheese - softened
  • 1/2 cup heavy cream (or whipping cream)
  • 1 1/2 tsp. vanilla
  • 3 packets unflavored gelatin
  • 3 tbsp. blackberry preserves
  • 1 14 oz. can sweetened condensed milk
  1. In a clean bowl whip the heavy cream and vanilla together to form soft peaks.
  2. In another bowl with a hand held mixer, beat the cream cheese, gelatin, preserves and condensed milk until completely combined.
  3. Fold in the whipped cream.
  4. Next, fold in all of the berries.
  5. Put the mixture in the graham cracker crust and place in the freezer until firm. This may take 2 or 3 hours.
The pie is in the freezer so I'll take a photograph of the plated dish later on and post it. The filling is scrumptious.
