Sweet and Spicy Bacon Wrapped Chicken

This is a really, really good appetizer served with toothpicks.  It's not overly expensive to make especially if you take advantage of your store's sale items. Originally I saw the recipe on Paula Deane's show on the Food Network. I have made them a few times and they are a huge hit.
  • Boneless skinless chicken breasts
  • Bacon
  • Cooking Spray
In a bowl combine these ingredients:
  • 1 cup light brown sugar
  • 2 tbsp. chili powder
  • 1 pinch cayenne pepper
  1. Take the boneless skinless chicken breasts and cut into bite sized pieces (about 1/2" thick)
  2. Bacon - slice and wrap around each piece of chicken then roll in the brown sugar mixture.
  3. Place the pieces on a baking sheet that has been sprayed with cooking spray.
  4. Preheat the oven to 350°. Bake until the bacon is crispy and the chicken is done. About 20-30 minutes.
The video is actually Paula making these with her sons. I hope you try these. My additional ingredient was the cayenne pepper and I ramped up on the brown sugar, probably because we were making quite a few of these. We liked just that little bit of extra heat that the cayenne pepper gave.
