Chocolate Frosting
If you like a not so sweet frosting, this one is for you. I made this the other day not measuring a thing and it came out great. Today I tried to duplicate it and measure so I could draw up a recipe. It just got my husband's stamp of approval.
- 1 1/4 cups confectioners sugar
- 1/2 cup cocoa
- 1 8 oz. bar cream cheese - softened
- 7-8 tbsp. milk
- 1 tsp. vanilla
- Using a fine mesh strainer or sifter, sift the confectioners sugar and cocoa in a bowl.
- In another bowl with a hand held mixer or the bowl of a stand mixer, whip together the cream cheese and vanilla. Add in a cup of the sifted cocoa and sugar and 1 tablespoon of milk at a time.
- Keep mixing and adding one cup of dry and one tablespoon of milk, beating after each addition.
- Only add the last tablespoon of milk if you want it a touch looser.
- Scrap the sides and bottom of the bowl to make sure it is mixed well and frost your cake.
