Southwest Salad with Chipotle Dressing
Southwest Salad with Chipotle Dressing ~ a snappy and delicious summer salad with bold flavor and great textures.
The other day I had this fabulous Southwest Salad from a small restaurant in our area. I loved it so much that I recreated Southwest Salad with Chipotle Dressing for a light summer supper. This whole dish comes together so quickly and is super if you don't have lots of time to spend in the kitchen.
For the Chipotle Dressing:
1 or 2 heads Romaine Lettuce (I used hearts of Romaine)
grape tomatoes split in half (or cherry tomatoes)
black beans - drained and rinsed
shredded cheese - Monterey Jack, Cheddar or Mexican blend
tortilla chips
You could totally have this as a light summer meal or serve this as a side to your favorite Mexican style dinner.

For the Chipotle Dressing:
- 1 cup sour cream
- 1/3 cup mayonnaise
- 1 tsp. chipotle peppers in adobo sauce
- 2 tsp. lemon juice
- 1 tsp. granulated garlic
- pinch of salt
- ground black pepper to taste
- 2 tbsp. half and half
1 or 2 heads Romaine Lettuce (I used hearts of Romaine)
grape tomatoes split in half (or cherry tomatoes)
black beans - drained and rinsed
shredded cheese - Monterey Jack, Cheddar or Mexican blend
tortilla chips
- You can make this salad on a large platter or make individual portions and let everyone choose how much of the ingredients to add to the salad.
- When the salad is assembled, drizzle on the dressing and enjoy.
You could totally have this as a light summer meal or serve this as a side to your favorite Mexican style dinner.
