Do you sometimes stress about dinners during the week and getting a "decent" meal on the table? When my children were young I was exactly where you are now and my kids were not involved in many activities like the kids are today. My hope is to help you relieve some of that stress by offering you this collection of easy, delicious and ready in 30 to 40 minute meals.
At Cooking On A Budget I am all about providing you with solid recipes that are not complicated to make, generally do not use ingredients that are not in the every day realm of cooking and for the most part are very affordable to just about everyone!

Creamy Chicken and Pasta is made with left over chicken. It's what I refer to as a "make-over" meal. The whole family will love this simple dish and you'll love that it costs so little and takes so little time to put together. This is actually my latest post.



Weeknight Cajun Chicken - bold flavor, easy and it's ready in a snap. Made with a Cajun spice of your choosing and on sale chicken breasts this too can be very economical. You can round out the meal with a vegetable and starch of your choosing. The last time I made this I did a simple and inexpensive zucchini saute.


Shake and Bakish Style Pork Chops are really, really good. No box mix here. It's so easy and you can use the same mix for chicken as well! We have these quite often and I think you are going to love them. The seasoning mix is perfect and you end up with juicy chops with that nice crunchy coating.


Italian Stallion Grilled Cheese Sandwich - on a chilly, damp day there's nothing like a grilled cheese sandwich. It's pure comfort food. Although it stands on its own as a meal you could open up a can of your favorite tomato soup to go along side. I found Ciabatta bread to be perfect for this sandwich meal!


Cube Steak with Mushroom and Onion Beef Gravy is an extraordinary weeknight dinner. It's one of the most popular recipes here on Cooking On A Budget. And you can be a master at cooking the cube steak by following my directions. We like to serve with mashed potatoes and a vegetable. Even with quicker cooking egg noodles this dinner will be one the whole family will enjoy.


Mexican Shepherds Pie - is also very popular here on the blog and it is getting pinned a lot. It's delicious and so easy to make. This is one that you will want to have in your dinner rotations for sure, especially if you like those Mexican flavors. The ingredients are simple and blend together beautifully.


Chicken Piccata - my word this is delicious and it's easy and quick cooking. I love this recipe and will be making it again very soon. It's become one of our favorite chicken dishes. This recipe is as good as you would get from a restaurant and in many cases, better than. Plus it's elegant enough to serve if you have invited friends or family over for dinner.


Weeknight Stir-Fry Rice and Vegetables - using left over rice and combining it with vegetables makes perfect sense for a quick, scrumptious vegetarian dish for during the week when time is short.


Mushroom Rice and Roni is my new favorite version of rice and roni. I adore mushrooms and this is a fabulous and filling vegetarian meal!
