Egg Salad
Busy, busy day. During the holiday season we are so pressed for time and find ourselves too tired to cook. Here is one example of a quick fix on what to have for supper. Not much skill in preparing this and the children can help with peeling eggs, making the toast or mixing all the ingredients.
- 8 eggs - hard boiled and peeled
- 1 stalk of celery -ribs removed and small dice
- 1/2 cup or so of good mayonnaise
- 1/4 tsp. black pepper
- 1/8 tsp. salt
- lettuce (I like iceberg lettuce with egg salad)
- In a food processor, pulse the eggs to the consistency you want. Transfer to a bowl.
- Peel the ribs off the celery and cut into small dice. Add to the eggs.
- Add the salt and pepper.
- Add the mayonnaise and mix well. Adjust for additional salt and pepper.
- Toast up some bread and spread a layer of the egg salad and add the lettuce.
