Egg Salad

Busy, busy day. During the holiday season we are so pressed for time and find ourselves too tired to cook. Here is one example of a quick fix on what to have for supper. Not much skill in preparing this and the children can help with peeling eggs, making the toast or mixing all the ingredients.
  • 8 eggs - hard boiled and peeled
  • 1 stalk of celery -ribs removed and small dice
  • 1/2 cup or so of good mayonnaise
  • 1/4 tsp. black pepper
  • 1/8 tsp. salt
  • lettuce (I like iceberg lettuce with egg salad)
  1.  In a food processor, pulse the eggs to the consistency you want. Transfer to a bowl.
  2. Peel the ribs off the celery and cut into small dice. Add to the eggs.
  3. Add the salt and pepper.
  4. Add the mayonnaise and mix well. Adjust for additional salt and pepper.
  5. Toast up some bread and spread a layer of the egg salad and add the lettuce.
Serve the sandwich with some fruit, what ever fruit you like. Quick, healthy and simple and cheap.
