Making Pizza with Left-overs

Making Pizza with Left-overs
Homemade Pizza is an easy and quick solution to utilizing left-overs. If you have had a spaghetti dinner with sausage or meatballs then pizza is a great way to make another meal. For this recipe you will need some store bought pizza dough, shredded mozzarella cheese (or any cheese you like), flour and cornmeal, a red pepper and red onion.  These are ingredients you may already have in your pantry. One bag of pizza dough yields a large pizza of 8 slices.
Preheat your oven to 450 degrees.
Slice up 1 small red onion and 1 small red bell pepper (or any other pepper you like)
Slice the sausage or meatballs into bite-sized pieces.
Saute the red onion and red bell pepper in a skillet with some olive oil, onion powder, granulated garlic, salt and pepper to taste. Saute until just softened, then add in 1 tbsp. of  balsamic  vinegar. Toss and cook for 2-3 more minutes. Turn off the heat and allow to cool.
Meanwhile roll your dough out on a floured surface and place on a round pizza pan (or rectangular sheet pan) that has been liberally sprinkled with cornmeal.
Next, assemble the pizza: sauce first, then cheese, then add your toppings.
Bake for approximately 20 minutes or until the cheese is melted and the crust of the pizza is deep golden brown.  Double check that the bottom crust is golden prior to taking it out of the oven. Cook some additional minutes if it appears too soft.
YOUR PIZZA IS READY TO EAT!
