Abby's Tuna and Bisquick Bake
This recipe comes courtesy of a friend of mine - Abby Roccapriore. Abby made this for her family and her daughter hugged her and thanked Abby for a wonderful meal! This is definitely cooking on a budget and I look forward to trying it myself!
2 cans of tuna
3/4c minced celery
1 carrot shredded
1/2c mayo
2c Bisquick
1/2c water or white wine
1c cheddar cheese
Set oven to 425. Lightly grease cookie sheet. Make tuna salad. Mix Bisquick and water until a dough forms. Knead on a counter lightly dusted with Bisquick 20 times. Roll it into a 14x11" rectangle. Put it on the cookie sheet and spoon the tuna down the center. cover with the cheese. make slits up each side at 1" intervals, and then take each strip and lay it over the top of the tuna. Pinch each one onto its opposing strip. Bake until golden, about 20 mins.
