Meatloaf





Meatloaf is one of those comfort foods that most everyone can relate a food memory to. It is a staple in just about every diner in America and in some upscale restaurants they have re-created meatloaf and taken it to a whole new level. For many of us there is a recipe that has been handed down from grandmother, to mother. Meatloaf is one of those dishes that gets created over and over again and each of us puts our own spin on it.
 
This is a recipe I created in my kitchen and I hope you like it. It's a basic recipe and costs so little to make. Between the ground chuck I purchased on sale and the other ingredients that went into making it, it cost about $6.00 and there was enough to feed 6 people.



  • 1 1/2# ground chuck beef
  • 1 cup fresh bread crumbs
  • 2/3 cup onion - finely diced
  • 1/4 cup grated Parmesan cheese
  • 2 eggs
  • 1/3 cup sour cream
  • 1/3 cup ketchup
  • 1 tbsp. dried parsley
  • 1 1/2 tsp. granulated garlic
  • 1 1/4 tsp. black pepper
  • 1/2 tsp. kosher salt - or to taste
In a bowl combine all ingredients (use your hands) until well incorporated. Do not over work the meat.  Form into a loaf and bake in a 350 ° oven for about an hour or until a probe thermometer reaches 150 °.
