Roast Chicken Basting Mixture

Rotisserie Chicken - love my Showtime Rotisserie!

Chicken in and of itself is pretty bland. You need to spice it up no matter what. I created this basting mixture many years ago and just pulled it out of my kitchen archives. This could be a marinade and a basting mixture for either boneless chicken or bone-in or a whole chicken. Just be sure that if you marinate the chicken in it that you have saved some for basting. You do not want to cross contaminate!
  • 1/4 cup white wine - use one you would drink
  • 1/4 cup gravy master
  • 1/4 cup oil (really any oil would work)
  • 1 small onion - finely minced
  • 1 clove fresh garlic crush it and finely minced (or use 1 tsp. granulated)
This recipe can be doubled if need be.  In a glass bowl, combine all ingredients and whisk well. With a roasting chicken start basting half way through the cooking time.
