This week I would like to focus in on using eggs in a variety of ways. And I just got a phone call that we have some nice fresh clams coming our way. That, along with the some fresh Jersey corn and a possible harvest of summer squash from our own garden this coming weekend, has me very excited about creating some new recipes! Now, if our neighbor who has chickens would fill one of the empty egg cartons we have given her with a dozen fresh eggs, I would be even more egg-cited! Be sure to come back during the week to see what I have been able to come up with.
