The Healthy Side of Kale


Kale is one of the most nutritious vegetables you can consume for healthy living as you can see by the above chart. It is a low calorie, low carbohydrate vegetable packed with vitamins. Also high in antioxidants it has been proven to be a must vegetable for those who are at risk or who have heart disease.
When I cooked at an assisted living facility for the elderly, it was recommended that we have kale and broccoli rabe available for some of the residents in addition to our nightly vegetable serving. The cooking method was often a simple saute - wilting down the kale in a saute pan with some olive oil and minced garlic and a few red pepper flakes. Or, we would steam it in the commercial steamer and let them drizzle it with some vinegar.
Kale is wonderful in soups. That's why I love the Kale and Clam Soup. In my recipes for Swiss Chard and White Bean Soup and Sausage and Swiss Chard Casserole  you could easily replace the Swiss chard with kale.
So, the next time you have to do a grocery run think of having kale in your weekly menu and enjoy the flavor and the health benefits. Live well, eat well and love your greens!

This kale is not only edible, but can be used for decoration on a buffet table.
