Abernathy Biscuits


As I have been looking through some old recipes I discovered this one for "Abernathy Biscuits". It was one of those recipes that my mother used to like to make during the holiday season.
The recipe is fairly simple and for those of you who like Caraway Seeds, you will enjoy these.


In a bowl sift together:
  • 1 1/2 cups all purpose flour
  • 1/2 tsp. baking powder
  • 1/2 cup white granulated sugar
Add to that:
  • 1/2 tsp. grated lemon rind
In a food processor - place all of the above ingredients. To that add:
  • 1/2 cup COLD butter
Pulse until the mixture is crumbly. Add to that:
  • 1 tsp. caraway seed
Transfer the ingredients to a large bowl.

In a small bowl whisk together:
  • 1 egg beaten
  • 1 tbsp. lemon juice
Add the egg and lemon juice to the large bowl of ingredients and with your hands work it into a stiff dough.

Wrap the dough in plastic wrap and form a flat disc. Chill for 20-30 minutes.

Roll out the chilled dough on a slightly floured surface to 1/8" thickness.
Cut the dough in 2 inch circles and prick each one with a fork in a few places.

Bake on a cookie sheet in a preheated 375 degree oven for 8 to 10 minutes until golden brown.
