Holiday Open House Menu
Want to rock around the Christmas Tree and have a happy holiday? Here's a spiffy open house menu that will have your guests singing merrily. You will be just oh so jolly - first deck your halls with boughs of holly.
(As you read the above paragraph, have the song playing in your head!)  
- Hot Chocolate - whipped cream and mini marshmallows
 - Ruby Jewel Cookies
 - Shortbread Cookies
 - Hot Crabmeat Dip with crackers (recipe below)
 - Artichoke Dip with pita chips
 - Pigs in a blanket (cocktail franks wrapped in puff pastry)
 - Grapes, sliced cheeses and cracker platter
 
 Hot Crabmeat Dip:
- 1 lb. lump crab meat - be sure to remove any cartilage.
 - 4 8 oz. bars cream cheese - softened
 - 1 cup (or so) mayonnaise
 - 4 hard boiled eggs - finely chopped
 - 8 oz. sharp cheddar cheese - shredded
 - 3 tsp. lemon juice
 - 1 1/2 tsp. Worcestershire sauce
 - salt and black pepper to taste
 - Cooking spray
 
- In a bowl, combine the softened cream cheese, mayonnaise, lemon juice and Worcestershire sauce. Mix well by hand or use an electric mixer.
 - Add in the finely chopped cooked eggs and 1/2 shredded sharp cheddar cheese - blend together by spoon. Add a touch of black pepper and salt to taste.
 - Last, carefully fold in the lump crab meat.
 - Lightly spray a casserole dish with cooking spray.
 - Transfer the mixture to the casserole dish. Sprinkle the other 1/2 cheese on top.
