Holiday Open House Menu

Want to rock around the Christmas Tree and have a happy holiday? Here's a spiffy open house menu that will have your guests singing merrily. You will be just oh so jolly - first deck your halls with boughs of holly.

(As you read the above paragraph, have the song playing in your head!) 

 Hot Crabmeat Dip:
  • 1 lb. lump crab meat - be sure to remove any cartilage.
  • 4 8 oz. bars cream cheese - softened
  • 1 cup (or so) mayonnaise
  • 4 hard boiled eggs - finely chopped
  • 8 oz. sharp cheddar cheese - shredded
  • 3 tsp. lemon juice
  • 1 1/2 tsp. Worcestershire sauce
  • salt and black pepper to taste
  • Cooking spray
  1. In a bowl, combine the softened cream cheese, mayonnaise, lemon juice and Worcestershire sauce. Mix well by hand or use an electric mixer.
  2. Add in the finely chopped cooked eggs and 1/2 shredded sharp cheddar cheese - blend together by spoon. Add a touch of black pepper and salt to taste.
  3. Last, carefully fold in the lump crab meat
  4. Lightly spray a casserole dish with cooking spray.
  5. Transfer the mixture to the casserole dish. Sprinkle the other 1/2 cheese on top.
Bake in a 350 degree oven until the mixture is bubbling and the top is a nice golden brown.
