Baked Cod With Cracker Topping


Here, fishy, fishy fishy. Come with me to my kitchen.
Baked Cod with buttery Ritz cracker crumb topping. Winner, winner fish dinner. Along side some baby red parsley potatoes and squash saute. Perfect dinner for any night of the week. Obtaining the cod on sale, these two loins were enough to feed four people a nice portion along with the sides of vegetables. Unless your my husband  - he loved it so much he had 2 large hunks himself! One half was portion enough for me.

  • Cod Loins - 2 pieces (approx. 1 1/2 lbs.)
  • 4 tbsp. butter - melted
  • 15 Ritz crackers - crushed
  • salt and pepper to taste
  • olive oil - drizzle of for baking sheet
  • 1 tbsp. butter - for the baking sheet
  • white wine - approximately 3 tbsp.
  • 1/2 lemon 
  • foil to line your baking sheet

  1. Melt the butter in a bowl in the microwave and to that add the crushed Ritz crackers. Stir to blend in with the butter.
  2. Wash and dry your fish.
  3. Season both sides with salt and pepper to taste.
  4. With your hands, packed on the buttery Ritz topping on each loin. Refrigerate for about 15-20 minutes to let the crackers set up.
  5. Line a baking sheet with foil. Pour in the olive oil and place the butter on the pan with the wine and the lemon juice from half a lemon.
  6. Preheat your oven to 400 degrees. Take the cod out of the refrigerator and place on the baking tray.
  7. Bake at 400 degrees for 10 minutes. The cod should be opaque when it is cooked. Adjust by a couple of minutes if your fish is really thick.
Serve with a side of parsley baby red potatoes (or rice) and a nice vegetable or salad. We had a saute of yellow squash and zucchini squash that I seasoned with salt, pepper, onion powder and a pinch or so of dill weed then in a pan with melted butter and olive oil.
