Budget Buster Brownie
This is floating around a popular social site and obviously it is a freebie. I want to try and figure out if you can truly make this for the 30¢ per mix and add in the other ingredients needed to whip it up to figure out a final cost. Here in our state of Connecticut which tends to be costly to live here, the mix came out to 50¢ and the wet ingredients are 84¢. Total is: $1.34 which is definitely a better price than a box mix. I've seen the box mixes on sale at two for $3.00 which is $1.50 plus the wet ingredients. Conclusion: Make your own mix. You can store the dry mix in zip lock bags that you label and date. I believe they would keep for about six months. This would be a handy thing to have on hand for during the school year. If you send your child to school with a "treat" why not make it home made and know that you are not feeding them anything with any chemicals.

- 1 cup white sugar
- 1/2 cup all-purpose flour
- 1/3 cup cocoa
- 1/4 tsp. salt
- 1/4 tsp. baking powder
- 2 eggs
- 1/2 cup oil
- 1 tsp. vanilla
- Mix all of the dry ingredients in a bowl. Save the mix in a plastic zip lock bag and label if you are making this for another day.
- To the dry ingredients add the eggs, the oil and the vanilla. With a hand held mixer blend together at medium speed for about 2 minutes.
- Pour the mix into a greased 8 x 8 or 9 x 9 inch baking pan.
- Bake in a preheated 350° oven for approximately 35-40 minutes.
