Grilled Summer Squash and Zucchini
What a treat it has been having readily available zucchini and yellow summer squash. To prep the squash is easy. Just slice length wise. Toss the squash in a bowl with some olive oil and seasoning. Simple salt and pepper is just fine. I added granulated garlic and onion powder as well. It was delicious and cooks fairly quickly on the grill.
Don't have a grill? Then put it in a saute pan and cook until you reach the desired doneness you like.
I'll be making more grilled squash to accompany my grilled Teriyaki Sirloin tips tonight.
