Pineapple Salsa
I love the word: salsa. Every time I say it I am reminded of Jerry Seinfeld who did a comedic bit and it was the way he enunciated the word, "salsa".
This is simple and easy to make and it's a great accompaniment to fish, poultry or pork. So whether you are grilling or baking your fish, give this one a try.

- 1 cup fresh pineapple - diced
- 2 tbsp. red onion - minced
- 2 tbsp. scallion - small dice
- 1 tbsp. red bell pepper - finely minced
- 1 tbsp. fresh parsley - finely minced
- 1 tbsp. honey
- dash ground crushed red pepper flakes or cayenne pepper
- 2 tsp. jalapeno pepper - de-seeded and finely minced
- juice of 1 fresh lemon or lime - approx. 1 1/2 to 2 tbsp.
- 1/8 tsp. black pepper
