Sweet Chili Bacon Wrapped Chicken





Yum This is one of the appetizers I made for our holiday gathering. They are really, really good and can be an appetizer served with toothpicks. It's not overly expensive to make, especially if you take advantage of your store's sale items. For a family pack of chicken breasts which generally has five breasts figure 2 to 2 1/2 pounds of bacon.
  • 5 boneless skinless chicken breasts
  • 2 - 2 1/2 lbs. bacon
  • round toothpicks
  1. After washing the chicken under cold water, cut into 1/2 inch cubes.
  2. Cut the bacon slices in thirds.
For the sweet chili rub:
  • 1 cup light brown sugar
  • 2 tbsp. chili powder
  • 1- 2 good pinches cayenne pepper (more if you like it more spicy hot)
  1. Preheat the oven to 375°.
  2. In a bowl combine the above ingredients. Mix with your hands or use a whisk to incorporate well.
  3. Wrap the bacon around each piece of chicken, skewer with a toothpick then roll in the brown sugar mixture.
  4. Place the pieces on a baking sheet sprayed with a cooking spray. Bake until the bacon is crispy and the chicken is done. About 20-25 minutes.
