Summertime Rum Punch Cocktail

There is a cure for the Summertime Blues - alcohol! Now I am not advocating getting all jiggered up mind you, but a lovely concoction on a hot summer's day isn't a bad thing. A day in the warm sunshine with some great friends, a variety of snacks, a deck of cards and you have a nice Sunday afternoon gathering. Lots of laughs, some great food and of course a special drink to share around. Hey I just described this past Sunday with friends!


I made these in a blender, but you can stir the drink if you like. Doing it in the blender gave that nice froth at the top of the glass. Be careful not to blend to long otherwise you end up with tons of froth!
This recipe is enough for 3-4 cocktails.
  • 1 cup orange juice
  • 1 cup crushed ice
  • 7 oz. can pineapple juice
  • 1/2 cup cranberry juice
  • 1/2 cup white rum
  • orange slices (optional)
  1. Add all of the ingredients including the ice in a blender. Pulse for about 5 seconds.
  2. You are ready to serve. Garnish with a slice of orange if desired.
These are so darn tasty and you hardly notice there is alcohol in it. I like my cocktails on the weaker side now so the amount of rum was perfect. Even my beer drinking husband said this cocktail was excellent despite the fact he is not much for anything other than beer.

So at your next gathering think about making this special Rum Punch Cocktail for your friends. It also will be a little bit of summer brought back to life in the dead of winter!
