12 Back to School Suppers ~ quick and easy meals ready in 30-45 minutes are sure to please your family!
One of my biggest stresses when the kids were young and still in school and I was working a full time job was getting a "decent" meal on the table every night and not something so elaborate that it wasn't going to be ready until 7 p.m. I believed back then and still do, that sitting around a dining table sharing food is one of the best way for families to connect and communicate.
In this age of technology I encourage my readers that have strayed from that value to get in the habit of doing it again. Put away all phones and any form of electronic device and spend at least 20 minutes a night one on one with your significant other and your children eating and talking about what happened in each others lives.
With that having been said, I have collected 12 wonderful weeknight meals for you and your family. They are simple preparations with amazing results (flavor) and don't take a long time from start to finish to make. 1. Cube Steak with Mushroom and Onion Beef Gravy is one of my most popular dinner recipes here at Cooking On A Budget. This is a dinner we make often. The post has tips for cooking the cube steak to perfection.
2. Panko Crusted Chicken Cutlets is another family favorite. They have a flavorful coating that is crispy and the chicken cooks up quickly. We often serve them with a side of fettuccine and a simple vegetable.
3. Easy Weeknight Macaroni and Cheese is undoubtedly a family favorite and one that's not only easy to make but you can bake this casserole in your toaster oven! It is now my go to recipe for mac and cheese.
4. Tex-Mex Goulash I took our basic American style goulash and transformed it into a winning dish putting a Tex-Mex spin on it. It's easy and incredibly tasty.
5. Easy Weeknight Chicken Tenders are one of my husband's favorites. When we have them, he's the chef. Serve with a marinara sauce or any sauce you like.
6. Quick and Easy Hamburger Stroganoff a delicious meal including ground beef and mushrooms in a creamy sauce served over egg noodles.
7. Baked Cod with Herb Crust is so incredibly good! We love cod and when we can splurge a bit, cod is the fish we love to cook with. This recipe is simple, but don't let that fool you - it tastes fabulous!
8. Pork Cutlet Milanese might sound fancy but it's not complicated. A nice blend of crumbs, herbs and Parmesan cheese in the coating make it a Milanese style dish.
9. Chicken Piccata is an easy, but elegant chicken dish that does not take long to put together. It's classic Italian and it's good.
10. Shake and Bakish Style Pork why buy a mix when you can make these juicy tender pork chops at home? The coating is crunchy and full of flavor. Everyone will love these. And they cook in about 30 minutes!
11. Creamy Stove Top Chicken Casserole is one of my latest recipes and the flavor is like a chicken pot pie. It's an amazing dish that the whole family is going to fall in love with.
12. Easy Zucchini, Sausage and Peppers Stove Top Casserole is also another recent creation. This is so economical and so easy to make and it tastes so good!
